Single Handed Cooking


Simple and easy. Healthy but good! Mom made supper for us today as we tried out our first one handed cooking recipe.


It's been a busy time. Mom has started outpatient OT and PT therapy 3 x week. They are doing electrical stim on her arm and leg to try to help achieve some normal tone in her muscles. Her therapist is working on getting her an "e-stim" device for her to use at home everyday in order to facilitate speedier progress.


So, after therapy today, she came home and whipped up a delicious meal for us! Seven (Lori, David, Audi, Art, Jack, Mom and Dad) of us enjoyed the Corn Crusted Chicken sandwiches. But most of all, we just enjoyed being together and laughing at some good and not-so-good jokes!

Those mini-sandys look great! Glad I can't smell them; or I'd really be hungry for them. ;>)

BTW, E-stim can be very effective to improve muscle circulation and to impede atrophy, thereby giving more muscle tone and helping provide for more balance in ambulation, which I'm sure the OT/PT told you.

Praying that it will help and that your mom can get an home E-Stim device. I know LaDonna will be motivated to use it. ... Bill

Please let Ladonna know that, although I guess she's been a little under the weather, NO ONE has made me cheese grits in 28 years, NOR have I EVER played an organ-piano duet with anyone else, so I would expect her to get well as quickly as possible so that I can enjoy BOTH these things again at some point...Terry Thomas (Hey!!)
